Dressing The Punks - Belin

When a baked apple is done right, it is pretty heavenly. I mean, come on. There’s nothing like a warm breakfast during the cold winter months. Similarly, there’s nothing like a warm dessert! So I’m sharing our favorite baked apple dish that can kind of be both. We call it a breakfast baked apple because we stuff it with homemade gluten free granola. The perfect job for little hands to help with in the kitchen. 

Breakfast Baked Apples

Ingredients:

4 Good baking apples (Golden Delicious, Fuji)

1/3 Cup granola 

1/4 Cup brown sugar (or 2 Tablespoons splenda brown sugar)

1/4 Teaspoon cinnamon

sprinkle of pumpkin spice

pinch of salt

4 Teaspoons butter (not included in filling mixture)

Before you get started, preheat that oven to 350 degrees.

Core the apples, just be sure not to cut all the way through your apple. If you prefer to use a pairing knife/spoon combo: cut a good sized whole in the stem side of the apple. Then get your spoon and scrape out the bottom and edges of the apple until there are no seeds left inside. 

Now that the apples are prepped for stuffing, call in your little helpers. Have them mix up all your filling in a large bowl. Oh. And don’t forget the spices! Then have fun cramming as much stuffing into each apple as you possibly can. You can really stuff these guys pretty full. 

Set your stuffed apples in a baking dish with a cup of water. Also, top each apple with about a teaspoon of butter. This step is pretty magical! Because as the butter melts it makes kind of a delicious caramel sauce with the brown sugar on the inside. 

Bake them for 30-45 minutes, until the apple is soft but not mushy. And then you’ll have these wonderfully fragrant apples. Whatever you do, resist eating them right away. Let them cool for five minutes before slicing into heaven. The butter will be melted in with the granola and the brown sugar with the tender apple. It’s really good stuff. And I don’t see a problem with eating it for breakfast. If you served it with ice cream then the ice cream would melt and it would then basically be like eating cereal! Am I wrong? Am I?!
